Fall Crisp

Peach Crisp

I made this little bit of deliciousness a couple of weeks ago and posted it on my Instagram account, but I have been slow on getting it here on my blog. Before the crisp autumn mornings give way to a winter wonderland here in Utah, I must share! This recipe is perfect on it’s own, or I put it on top of plain Greek yogurt (with cinnamon and stevia or honey mixed in). It triples as a breakfast, a snack or a dessert!  Lucky you!

1 cup rolled oats
1/4 cup pecans (chopped)
2 Tbsp coconut oil
2 Tbsp honey
1 tsp cinnamon
1/2 tsp vanilla
1/4 tsp sea salt
Combine all ingredients in food processor or Kitchen-Aid. Spray a pie dish or 9×9 baking dish. Slice thin 1 apple or 2 peaches and layer in bottom of the dish. Top fruit with oat mixture and bake in oven on 375 for 25 minutes. Let cool for 5-7 minutes before serving. Makes 6 servings.
