Almond Maple Granola Bars Recipe

These are better than the store-bought granola bars, hands down!  Drop whatever you are doing and go make these ASAP. I made these yesterday for my family and, of course, got snubbed by my 2 kids who are so, so incredibly picky.  I didn’t fight them to at least take one nibble as I was shoving them in my mouth. Lo and behold, I got home from work today to find a Tupperware full of crumbs and my son begging me to make them “all the time”.  I think we have another success here, my friends!  If my kids will eat them, your kids will love them!!

1/4 cup coconut oil (melted)
1/4 cup coconut sugar
1/4 cup pure maple syrup
2 cups rolled oats
1 1/2 cup almonds
2 tsp vanilla
1/4 tsp sea salt

In a food processor or Blendtec, pulse the almonds (I pulsed 10 times in the Blendtec) or roughly chop them up. Add all ingredients into a mixer (I used a Kitchen-Aid) and mix well. Dump the mix onto a cookie sheet covered with parchment paper or tinfoil and press into a flat layer (about 9×11) with a spatula. Bake in oven on 300 for 15 minutes uncovered. Cover with tinfoil and bake for another 15 minutes. Remove and let cool for 30 minutes to an hour then break into pieces. Store in an airtight container or Baggie. These Granola Bars would be perfect crumbled in Greek Yogurt!
