Since my last 2 posts have both been about yams, I think it is safe to assume that I am a little “yam crazy” right now. And why not? They are so delicious, and I love playing with new ways to flavor/season them.
This new one is like a complete opposite from the sweet tasting Coconut Cinnamon Yams from my last post. These are correctly titled ZESTY with a subtle smoky flavor. Try both versions, as they are both fantastic!
Peel yam and dice into cubes. Place in a large ziploc baggie. Pour olive oil over cubed yams, sprinkle with smoked paprika and ranch, seal the bag and shake until all are coated. Lay yams on a baking sheet/dish and bake on 400 for 40 minutes minutes. Multiply the recipe to make a larger batch.
