Coconut Cinnamon Yams

Stop what you are doing right now and go make these! Right now. I mean it. The combination of coconut and cinnamon on an already sweet tasting yam makes these irresistible.  Candy, I tell you….candy. Perfect as a side for any lunch or dinner.

1 large yam
1 TB coconut oil

Peel yam and dice into cubes. Place in a large ziploc baggie. Melt coconut oil, pour over cubed yams, sprinkle with cinnamon, seal the bag and shake until all yams are coated. Lay yams on a baking sheet/dish and bake on 400 for 40 minutes. Multiply the recipe to make a larger batch. You’ll want to. Believe me.
