Chicken Cordon Bleu Recipe

I tried this Chicken Cordon Bleu recipe a couple of weeks ago with my own family and with 2 of my clients/friends.  Thumbs up all around!  But really…who doesn’t love melted cheese and ham wrapped in a seasoned breaded chicken? Um. We all do. Serve with rice and a roasted veggie, and you have yourself a winner!

4 chicken breasts
8 slices ham (Applegate® is my favorite)
8 slices Swiss cheese
1 cup breadcrumbs
1/2 tsp each garlic powder, onion salt and salt
1/4 cup Parmesan cheese
1 egg, 2 egg whites
toothpicks

Whip eggs together in a bowl. Blend crumbs, seasonings, and Parmesan cheese together and place in another bowl. Slice chicken breasts in half lengthwise and pound with meat tenderizer to make really thin. Salt and pepper chicken breast. Lay a slice of ham and slice of cheese in center of chicken. Roll up and secure with toothpick. Lay in a greased baking dish. Bake at 450 for 30-35 minutes. Makes 8. (Slice more chicken if you want more! The breadcrumbs will do more than 8 Chicken Cordon Bleu.)
